Easiest Banana Bread Ever



 

Not only is this the easiest banana bread ever it is also yummy, moist and completely addictive. I don’t know where I got the original recipe but I am eternally grateful to the author. I have tweaked it, hugely decreasing the sugar and adding in some brown flour. Most recipes do not need nearly as much sugar as called for. This one originally called for 1 whole cup of sugar. Way too much in my opinion especially since overripe bananas are already quite sweet. I hope you enjoy this recipe as much as my family does.  Enjoy!



A note about non-stick cookware:  I refuse to use it and have not yet found a bread pan without some sort of non-stick coating so I bake my loaf in a shallow ceramic oval. The non-stick coating on pots, pans and other cookware breaks down and emits toxic particles and gases when heated up. Yikes!



Easiest Banana Bread Ever
Ingredients
  • 4 medium sized bananas, really ripe
  • 1/3 cup butter
  • 1/2 cup cane sugar
  • 1 egg, beaten
  • 1 1/2  teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/4 teaspoon of salt
  • 1 cup white flour
  • 1/2 cup of brown flour
  • 1 cup chocolate chips

Method
  1. Preheat the oven to 350°F (175°C).
  2. Put bananas into a large mixing bowl and mash with a fork or a potato masher.
  3. Melt the butter and then mix it into the mashed bananas
  4. Mix in the sugar, egg, and vanilla.

  5. Sprinkle the baking soda and salt over top and stir in.
  6. Add both types of flour and mix well.
  7. Mix in the chocolate chips.
  8. Pour everything into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

Next time I'm going to try making this with gluten-free all purpose flour.  I'll let you know how that turns out.  If you have any ideas for variations let us know.  Leave a comment!
