How Do You Make Gluten-Free Pancakes that Actually Taste Good?



 
I had heard about these pancakes. How easy they were to make.  How good they tasted. And I have to say I was suspicious.  I didn’t think they would be any good.  You see, they are made without flour. No flour at all.  No almond flour, no oats, nothing.  The basic recipe calls for only two ingredients. Two! 

All you need are bananas and eggs.  That's it. You mash and mix and fry them up, and before you can say ‘gluten-free’, you have a plate full of pancakes. And the best part is they taste really good.
I have made them several times now and they are always met with great enthusiasm. This is the recipe the way I make it. You can add or subtract ingredients as you like.  Just keep to the basic recipe and you will be eating delicious banana pancakes in no time.
 

 


Delicious  Gluten-Free Banana Pancakes 

Ingredients
  • 3 bananas mashed
  • 4 eggs
  • 1 tsp vanilla (optional)
  • ½ tsp cinnamon (optional)
  • Coconut oil or butter for cooking

Other Options: chocolate chips, blueberries, coconut, walnuts, nutmeg, anything else you would put in a regular pancake

Directions
Mix the eggs into the bananas; add and mix the vanilla and cinnamon.  The mixture will be thin and lumpy, that’s ok. Now heat up the coconut oil and get ready to cook.  I use a ¼ cup of mix per pancake and cook as I would any other flapjack. You can make them larger if you prefer a big pancake or smaller if you're too lazy to use a knife.


Served with fruit and whipped cream.
